Gluten is a protein found in foods that contain wheat, barley and rye. It is what gives dough its elasticity which helps it to rise and keep its shape. Gluten is an intolerant thing for many people and is often referred to as Celiac disease and it affects 1 in every 133 people in the world. The problem with gluten intolerance is gluten is found in pastas, breads, and many other foods. Luckily there are some great recipes people can use there taste great and are gluten free.

One of the things many people who cant eat gluten miss out on is delicious chocolate brownies because the flour in them contain wheat. This is a great recipe for gluten free brownies. First start out with getting these ingredients

1/3 cup gluten-free flour (which can be found in health food stores)
1/3 cup brown sugar
1/3 cup sugar
1/3 cup applesauce
1/4 cup cornstarch
1/4 cup cocoa
1/4 cup oil
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
chocolate chips

Next comes the baking. Preheat the oven to 350 F and grease or butter a square baking dish. In a bowl mix the gluten free flour, cornstarch, both types of sugars, cocoa powder, baking soda, and salt. Continue mixing making sure to get rid of any lumps. Next add the applesauce, oil, and vanilla to the bowl and stir until everything is thoroughly combined. Lastly stir in the chocolate chips and then spread the batter into the greased or buttered baking dish. Bake for about 30 minutes depending how you like them. If you want them to be gooey cook them a little less if you want them to be more cakey cook them a little longer. Always be sure to let them cool before cutting them otherwise they will start to crumble.

Another great recipe for gluten free cooking is Macaroni and cheese.

1 1/2 cup of rice elbow macaroni (available from health food stores)
2 cups shredded American/cheddar cheese
1 cup Rice Milk
1 tablespoon margarine
1 tablespoon corn starch
cup finely chopped onion
Dash black pepper

Start by cooking the macaroni according to the box. Next add the onion and butter to a medium to large saucepan and cook until tender. Then stir in the flour and pepper mixing it all up. Slowly add the rice milk to the saucepan and cook until it is thick and bubbling. Stirring the whole time to ensure it doesn’t burn. Next add the cheese and continue stirring until the cheese is melted. Now stir in the macaroni and mix it up a little. Then place the macaroni and cheese in a baking dish and allow to bake uncovered at 350 degrees for about 25 minutes.

The health effects of gluten are not just limited to people who have Celiac disease or are allergic to gluten but can also affect thousands of people wo have a sensitivity to this foodstuff. Gluten is a protein that is found in wheat, barley, and rye and the consumption of food products that contain gluten can cause damage to the small intestines of celiac disease sufferers. Those individuals who are allergic to gluten may experience symptoms like mouth ulcers, diarrhea, weight-loss, iron-deficiency anemia after eating gluten-laden foods. Physicians advise those who have an aversion to gluten to abstain from it altogether in order to prevent these symptoms from appearing.I was looking for more information and found it here. However, if you do not have any known allergies but are constantly tired, stress-levels are always in flux, repeated headaches, and even experience skin problems like eczema, you may have a sensitivity to gluten. In order to find a correlation between these symptoms and gluten sensitivity, you can visit your doctor for a blood test. If it is determined that you in fact are sensitive to gluten, then like those with Celiac disease it is advisable to discontinue eating foods that have gluten in them. There are several gluten-free alternatives to your favorite foods available.

Gluten intolerance, or celiac disease, is a commonly misdiagnosed problem. The symptoms can include diarrhea, gas, bloating, weight loss, vomiting, anemia, severe fatigue, miscarriage and osteoporosis. These symptoms can mimic other diseases, or seem like separate unrelated problems. Sometimes the patient suffers for years before an astute medical professional puts the pieces of puzzle together.
The symptoms of celiac disease can start in early childhood, or later in life. It is caused by the body’ s autoimmune response to the gluten protein, which is found in wheat or other grains. This response affects the small intestine and causes it to work less efficiently. There is a genetic component, so it is important to be aware if other family members have had similar problems. A specific event can trigger the disease, such as surgery, a virus, pregnancy or trauma. Left untreated, the symptoms can wreak havoc on a person’s health and severely affect their quality of life. Undiagnosed celiac disease can even cause certain cancers and increase the mortality rate.
The good news is that once celiac disease is diagnosed, it is usually resolved by avoiding the consumption of all gluten products. Most patients report symptom improvement quickly, and the small intestine will begin to repair itself. Although the diet may seem difficult to maintain, the public awareness of this problem has made it easier to identify gluten-free products and now more information is available to make the diet an enjoyable and workable solution.
