Gluten is a protein found in foods that contain wheat, barley and rye. It is what gives dough its elasticity which helps it to rise and keep its shape. Gluten is an intolerant thing for many people and is often referred to as Celiac disease and it affects 1 in every 133 people in the world. The problem with gluten intolerance is gluten is found in pastas, breads, and many other foods. Luckily there are some great recipes people can use there taste great and are gluten free.
One of the things many people who cant eat gluten miss out on is delicious chocolate brownies because the flour in them contain wheat. This is a great recipe for gluten free brownies. First start out with getting these ingredients
1/3 cup gluten-free flour (which can be found in health food stores)
1/3 cup brown sugar
1/3 cup sugar
1/3 cup applesauce
1/4 cup cornstarch
1/4 cup cocoa
1/4 cup oil
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
chocolate chips
Next comes the baking. Preheat the oven to 350 F and grease or butter a square baking dish. In a bowl mix the gluten free flour, cornstarch, both types of sugars, cocoa powder, baking soda, and salt. Continue mixing making sure to get rid of any lumps. Next add the applesauce, oil, and vanilla to the bowl and stir until everything is thoroughly combined. Lastly stir in the chocolate chips and then spread the batter into the greased or buttered baking dish. Bake for about 30 minutes depending how you like them. If you want them to be gooey cook them a little less if you want them to be more cakey cook them a little longer. Always be sure to let them cool before cutting them otherwise they will start to crumble.
Another great recipe for gluten free cooking is Macaroni and cheese.
1 1/2 cup of rice elbow macaroni (available from health food stores)
2 cups shredded American/cheddar cheese
1 cup Rice Milk
1 tablespoon margarine
1 tablespoon corn starch
cup finely chopped onion
Dash black pepper
Start by cooking the macaroni according to the box. Next add the onion and butter to a medium to large saucepan and cook until tender. Then stir in the flour and pepper mixing it all up. Slowly add the rice milk to the saucepan and cook until it is thick and bubbling. Stirring the whole time to ensure it doesn’t burn. Next add the cheese and continue stirring until the cheese is melted. Now stir in the macaroni and mix it up a little. Then place the macaroni and cheese in a baking dish and allow to bake uncovered at 350 degrees for about 25 minutes.
